Sunday Breakfast

This Villaware Belgian Waffle maker  from Williams Sonoma is amazing. The iron is a nonstick surface and creates really deep pockets for all the syrup and goodies to throw on top.

Uncle Jerome’s Waffles

Ingredients
2 eggs
2 cups all-purpose flour
1 ¾ cups milk
½ cup vegetable oil
1 tablespoon white sugar
4 teaspoons baking powder
3 teaspoons vanilla extracts
2 tablespoons of brown sugar
½ teaspoon of nutmeg
1 teaspoon of cinnamon

Directions
1.     Separate egg whites from yellow
2.     Shift flour into large bowl
3.     Beat egg whites in a bowl with electric blender until fluffy and stiff
4.     Mix dry ingredients together in a large bowl (flour, baking powered, brown/white sugar, nutmeg and cinnamon.
5.     Mix wet ingredients: milk, vegetable oil, egg yellows and vanilla
6.     Mix wet and dry ingredients (not the egg whites) to create batter
7.     Fold egg whites into batter
8.     Spray waffle iron w/ cooking oil or grease w/ a brush
9.     Spoon batter w/egg whites into waffle iron and cook until golden light brown
